Seychellois cuisine is a rich blend of influences from around the world. French, African, Indian, Malagasy and Chinese traditions have all left their mark on the flavours we enjoy today. Over centuries, these influences combined with the islands’ unique environment to create a cuisine shaped by land, sea and cultural diversity.

The cookbook Sun, Sea and Spice celebrates this heritage through 50 authentic recipes, showcasing everything from treasured regional specialties such as La Digue’s famous Gato Kalou to traditional preservation techniques introduced through Malagasy heritage, including drying, smoking and salting foods.

As an island nation, Seychelles has one of the highest fish consumption rates in the world, with people enjoying nearly 90 kilograms per person each year. Before refrigeration, fish was commonly preserved through salting and sun-drying, ensuring food remained available throughout the seasons.

The book also highlights the foundations of Creole cooking. Many dishes begin with a simple combination of garlic, onions and ginger, while ingredients such as pumpkin appear throughout the cookbook as a salad, a chutney and even as part of main dishes. Green pawpaw, for example, is often treated as a savoury vegetable rather than a sweet fruit.

Seychelles’ culinary history is closely linked to its spice trade. In the late eighteenth century, French horticulturalist Pierre Poivre helped introduce valuable spices such as cinnamon, nutmeg and cloves to the islands. Today, these flavours remain an important part of Creole cooking.

Traditional island households also developed clever ways to avoid waste. Excess produce was often preserved as asar, while sauces, chutneys and condiments became important flavour enhancers. One of the most distinctive examples is Seychellois chilli sauce, which is not cooked and is more similar to a vinaigrette than a traditional hot sauce.

The cookbook also explores local ingredients and traditions, from the prized bannann mil used in banana fritters to Twisted Green Papaya Jam, a delicacy once associated with weddings. During the southeast monsoon season, when certain fish become less abundant, shark has traditionally served as a useful alternative.,
